Spicy Lentils With Eggs : Make Ahead Freezer Meals

Rinse the lentils well under running water. Drain and set aside.

Heat oil in a pan over medium heat and add the shallots and garlic. Sauté for 3 to 4 minutes until the garlic and shallots are golden and fragrant. Add the lentils and stir in the garam masala. Stir thoroughly to make sure the flavors are distributed evenly.

Add vegetable stock and turn the heat to high. Bring to a boil, and then reduce to a simmer and cover the pan. Cook for 30 to 35 approximately minutes or until the lentils are tender.

Season with adequate salt and add the finely chopped coriander leaves. Stir well.

Pre-heat the oven to 350°F. Lightly grease small ovenproof baking dishes. Distribute lentil mix evenly in each dish. Create a deep hollow in the center and crack in an egg. Sprinkle salt and pepper over the egg. Bake for 18 to 25 minutes until white is set and yolk is cooked. Serve hot/warm with rotis/rice/salads.


1. You can store the cooked dal mix, covered. It can be refrigerated for up to 5 days or frozen in portions for up to 3 months (thaw in the fridge overnight before using). Just take desired amount after thawing, into a baking dish, add eggs and bake.

2. You could play around with flavors by adding different spices, herbs like parsley or rosemary. You could also add a splash of coconut milk.
