Spicy Cauliflower Burgers : Make Ahead Meals

Ingredients:

Ingredients For the Cauliflower Burgers

3/4 cup uncooked quinoa

1 head cauliflower (about 6 cups of florets)

A few large shakes of cumin powder, chili powder, cayenne, etc. (you can add any seasoning you like)

1 to 2 cloves of minced

3 to 4 tablespoons oil

3/4 cup breadcrumbs or ground almonds

3/4 cup shredded/ grated cheese

3 eggs

Salt and pepper, to taste

Ingredients For The Burger Toppings

Good squeezes of lime juice

1/2 cup chopped coriander leaves

1/2 cup chopped purple cabbage

Coriander-mint chutney

Any kind of flavored mayonnaise or just plain

Burger buns

Procedure:

Preheat oven to 400 degree Fahrenheit. Cook the quinoa according to package directions and fluff with fork once completely cooked.

Cut the cauliflower into florets and transfer it to a greased baking tray. Drizzle 1 tablespoon oil and sprinkle with spices to taste (cumin, chili, cayenne etc). Roast the cauliflower for 20 to 30 minutes. Leave aside to cool.

Pulse the roasted cauliflower in a food processor to form small pieces. Do not puree the cauliflower. Combine the cooked, pulsed cauliflower with the quinoa, garlic, salt, breadcrumbs, grated cheese, eggs, and another teaspoon or two of the spice powders/ seasoning. Shape this mix into burger patties.

Heat oil on a pan on medium heat and brown the cauliflower patties until golden brown on each side. Drain excess oil on tissue.

Mix together lime juice, coriander, cabbage, and a little oil together. Season with enough salt.

Arrange the burgers with coriander-mint chutney, cauliflower patties, the prepared cabbage slaw, and mayo on top.

Notes

1. For a gluten-free version, use almond meal instead of breadcrumbs.

2. The cooked cauliflower patties can be kept in the refrigerator for 2 days. They freeze very well too. Just remember to crisp them up on the pan or in the oven for a few minutes before placing it on the burger.
