Procedure:

  1. Sauté onions and curry leaves till onions turn soft. Keep aside.
  2. In a wide bowl add the idli batter. Add sautéed onions, grated carrot, chopped bell pepper, chili powder and salt into it.
  3. In a little oil, temper the mustard seeds and add it to the batter. Add the sesame oil to the batter and mix well.
  4. Heat the tawa or pan and pour a ladleful of batter onto it. Drizzle with drops of oil around the uttapam. (just like you would for a regular dosa) Cook on both sides and serve hot with a chutney of your choice.

Notes

You can add other vegetables like shredded cabbage, finely chopped beans, etc to this uttapam.

You can skip adding the sesame oil into the batter if you plan to serve it immediately. If you do not plan to serve the uttapam straight from the stove, a little oil is helpful to keep the uttapams soft even after it has cooled.
