Procedure:

  1. Dry roast the rava on a low flame. Keep aside.
  2. Heat oil in a pan and add mustard seeds, channa dal, urad dal, green chillies, curry leaves and cashew nuts (if using). On a low flame, roast till the dals turn golden brown. Add chopped onions and sauté till it becomes soft. Add tomatoes and sauté till it becomes soft. Add salt and turmeric powder and stir.
  3. Now add the veggies and sauté for a minute. Add water and let the water come to a roll boil. Once it starts boiling, turn the flame to low and add the roasted rava to this. Slowly mix it, making sure all lumps are gone. Cook on a low flame till the rava gets completely cooked. Add ghee and mix well.
  4. Serve the khichdi hot with sambar or a chutney of your choice.

This Rava khichdi is a fantastic and filling breakfast complete with healthy semolina and variety of fresh vegetables.
