Quick Pizza Bites : Busy Weeknight Meals

Heat oven to 400 degree Fahrenheit.

Cut the block of mozzarella in half. Cut one half into small little chunks (1/2 inch in size approximately) and grate the other half. Set aside.

Place the pizza dough onto a floured surface. Cut the dough into smaller pieces using a pizza cutter or knife.

Flatten each piece of pizza dough and place a chunk of cheese. Wrap the dough around the cheese and pinch the seam closed. Lay the ball seam-side down on the floured surface.

Grease a baking dish. Add desired amount of pizza sauce into it. Carefully arrange the stuffed dough balls in the baking dish, seam-side down and placed slightly apart. Tuck the toppings of veggies (or non-veg if you prefer) in between the dough balls. Sprinkle as much cheese as you like over the top of the bites.

Bake for 25 minutes to 30 minutes until the pizza bites are puffed and golden-brown on top. The cheese should have melted completely.

Cool for 10 minutes and serve warm with a big bowl of fresh salads.
