Pikelets for Kids – Meals Under 30 Minutes

Ingredients:

  1. 2 cups Whole wheat flour (or 1 cup whole wheat flour + 1 cup all purpose flour)
  2. 2 to 2.5 teaspoons Baking powder
  3. 6 eggs (Optional)
  4. 4-5 cups of Mixed vegetables; finely chopped or grated
  5. Coriander leaves; finely chopped
  6. 1/2 – 1 cup grated cheese
  7. Milk, enough to make a batter
  8. Salt and pepper to taste
  9. Olive oil

Procedure:

  1. Mix flour, eggs, veggies and cheese together in a large bowl. Add seasoning and add enough milk to the mixture until it is slightly runny.
  2. Heat a frying pan with a small amount of olive oil and drop a tablespoon of the mixture into the pan, patting into a neat circle.
  3. Cook on a medium heat until golden on each side.
  4. Serve with hung curd or with any curry of your choice or as it is.

Notes:

All kinds of veggies will work in this recipe. Try adding finely chopped or grated carrot, zucchini, capsicum or corn etc.
