  1. Cook or steam the corn and keep aside. It should still have a crunch, so don’t overcook it.
  2. Grind the ingredients listed under ‘Ingredients To Grind’ with 1 tablespoon of water to a paste.
  3. Mix the cooked corn (which has been cooled), ground paste, pepper, flours and salt with a little water (not mandatory, only if the batter looks too dry. If adding 1/2 tablespoon should do). The consistency should be like a vada batter. Adjust flour or water to get the consistency right.
  4. Heat oil in a kuzhi paniyaram pan. Drop small spoonfuls of corn fritter batter into each cavity and fry till golden brown. Flip over to the other side half way through.
  5. Drain on kitchen towel and serve hot or warm.
