One Pot Wonder Meals: Mexican Chicken/Vegetable Rice Bowls with Avocado

  1. 2 large chicken breast bone-in
  2. 1 cup carrots; diced
  3. 1 cup sweet corn
  4. 2 to 3 cups tomatoes; diced
  5. 1 cup celery; diced
  6. 1 green bell pepper; seeded & diced
  7. 1 to 2 jalepenos/regular green chilies (depending on how hot you like it)
  8. 1 cup red onion
  9. 2 to 3 cups white rice; cooked
  10. Generous amount of fresh cilantro; coarsely chopped
  11. 4-5 cups chicken broth (vegetable broth for the vegetarian version)
  12. Ripened avocados
  13. Lemon


  1. Preheat oven to 450 Degree Fahrenheit. Brush chicken with olive oil and season generously with salt and pepper. Bake for 45-60 minutes. Let chicken cool and then shred. (you can also shallow fry this on a pan and then shred it)
  2. In a large pot, add diced vegetables, cooked rice, shredded chicken, jalapeno peppers or chilies, onion and chopped cilantro and enough chicken/vegetable broth to cover the ingredients.
  3. Bring to a simmer. Cover and simmer just until carrots are slightly
    tender. You want the vegetables to maintain a little bit of crunch.
  4. Taste the broth and add fresh black pepper, salt and red pepper flakes (if needed)
  5. Place soup into a serving bowl and squeeze a lime wedge over it.
  6. Add half a diced avocado and some more freshly chopped cilantro.
  7. Serve and enjoy!

Note- For the veggie version, you can omit the chicken mentioned in the recipe and add cooked red kidney beans (rajma) into it

Remember- This meal stays well in the refrigerator for 2 days. You can also freeze it to last longer.
