One Pot Super Meal : Jambalaya Fried Rice

Procedure:

Beat eggs with a pinch of salt. Heat a little tablespoon oil in a wok over medium heat. Add the eggs and cook, stirring until the eggs are just set and scrambled. Transfer to a dish and set aside.

Add a little more oil to the pan and heat over medium heat. Add the chopped celery, onion, bell pepper, garlic, thyme, and cayenne; season with salt; and cook, until softened. Add the sausage and cook until just starting to brown. Add the ketchup and cook until slightly darkened in color.

Increase the heat to medium-high. Add the cooked rice, Worcestershire, and enough salt; season with pepper; and cook, until the rice is heated through and starting to brown. Stir in the scrambled eggs. Taste and season with more salt or Worcestershire as needed. Serve warm.

Jambalaya Fried Rice is a great dish which can be made in a jiffy and is super cool because you can use whatever left-over ingredients you have in your refrigerator and pantry. A quick complete meal you can pull off for lunch or dinner which contains a whole lot of veggies and other tid-bits. Enjoy!
