Mixed Vegetable Poha
1 cup poha (preferably red or brown rice poha because of higher nutritive value. In absence of either, please use whatever is available in your pantry)
1/2 medium size onion, thinly sliced
1/2 medium size Carrot, finely chopped
4 to 5 french beans, finely chopped
1/4 cup small size cauliflower florets
2 tablespoons green peas
1.5 tablespoons roasted peanuts
1/2 tablespoon raisins (optional)
A pinch of nigella seeds
1/2 teaspoon turmeric powder
Juice from one lemon
Small bunch of coriander leaves, finely chopped
2 teaspoons vegetable oil

Steam the green peas, carrots, cauliflower and beans until it is cooked. Once cooked, keep the vegetables aside.
Place the poha in a colander and rinse it well under running water. Once washed set aside the poha.
Heat oil in a wok and add the nigella seeds and allow it to crackle. Add sliced onions and sauté over medium heat till light brown in color. Once the onions are tender, add the turmeric powder, steamed vegetables, peanuts, raisins, and salt. Stir to combine and finally add rinsed poha.
Give the poha a gentle stir until all the ingredients come together. Turn the heat to low and cover the pan. Allow the poha to cook in the steam along with the vegetables. This will take about 3 to 4 minutes.
After 3 to 4 minutes, you will notice the poha has puffed up slightly. Turn off the heat and stir in the juice from one lemon and the coriander leaves. Check for salt and adjust if necessary.
