Procedure:

Soak rice for 15 minutes and cook along with salt. When done, allow this to cool in a flat plate and separate the grains with a fork.

Heat oil in a wok and add the mustard seeds, peanuts, urad dal and roast till golden brown. Add this to the cooked and cooled rice.

In the same pan add all the ingredients listed under ‘Ingredients To Roast And Grind’ except coconut. Fry till the curry leaves turn golden. Make sure the ingredients don’t get burnt. Do this on a low flame. Once the curry leaves have turned golden, switch off the flame and add coconut and stir well. Grind this mixture into a coarse paste without adding water. Add this ground masala mix to the rice.

Mix the rice gently and if adding ghee, add at this stage and combine to allow flavors to permeate evenly.

Serve this dish with a cool cucumber and carrot raita.

Notes

This recipe does not use onions and garlic. But if you like those flavors, throw in 2 to 3 cloves of garlic and 1 small size onion to it. Make sure the finely chopped onions are sautéed till golden brown and added to the rice.
