Hot And Sour Soup With Mushrooms Cabbage and Rice : One Pot Meals

Ingredients:

  1. 1 tablespoon vegetable/ olive oil
  2. 1 & 1/2 cups button mushrooms, stems removed and thinly sliced (refer notes)
  3. 1 green chili, finely diced or slit lengthwise
  4. 6 garlic cloves, minced
  5. 3 inch piece ginger, grated OR 1 tablespoon ginger paste
  6. 1 to 3 lemons, zested and juiced
  7. 8 cups vegetable/chicken broth (you could use any other meat broth too)
  8. 1/2 cup basmati/jeera/jasmine rice
  9. 2 tablespoons soy sauce, plus more to serve
  10. 1/2 small head cabbage, cut in half and thinly sliced into stripsSalt, to taste
  11. Salt to taste
  12. Pepper, to taste
  13. Chili garlic sauce or kimchi, to serve

Procedure:

Heat the oil in a large heavy pot over medium-high heat. Add the mushrooms and cook for 5 minutes without stirring. Stir the mushrooms after 5 minutes and cook for 5 more minutes, or until well-browned. Add the diced chilies, garlic, and ginger and cook for about 5 minutes, or until fragrant and slightly softened.

Add the lemon zest and broth and bring to a simmer. Add the rice, cover, and simmer until the rice is just barely soft. Add the sliced cabbage, lime juice, and soy sauce and simmer for another few minutes, or until cabbage is hot. Taste and add more lime juice, soy sauce, salt and pepper, or other seasonings to taste.

Serve with extra soy sauce, lime wedges, and chili garlic sauce or kimchi.

Notes

You can use any mushrooms of your choice – shitake etc.
