  4. 6 garlic cloves, minced
  5. 3 inch piece ginger, grated OR 1 tablespoon ginger paste
  6. 1 to 3 lemons, zested and juiced
  7. 8 cups vegetable/chicken broth (you could use any other meat broth too)
  8. 1/2 cup basmati/jeera/jasmine rice
  9. 2 tablespoons soy sauce, plus more to serve
  10. 1/2 small head cabbage, cut in half and thinly sliced into stripsSalt, to taste
  11. Salt to taste

Heat the oil in a large heavy pot over medium-high heat. Add the mushrooms and cook for 5 minutes without stirring. Stir the mushrooms after 5 minutes and cook for 5 more minutes, or until well-browned. Add the diced chilies, garlic, and ginger and cook for about 5 minutes, or until fragrant and slightly softened.

Add the lemon zest and broth and bring to a simmer. Add the rice, cover, and simmer until the rice is just barely soft. Add the sliced cabbage, lime juice, and soy sauce and simmer for another few minutes, or until cabbage is hot. Taste and add more lime juice, soy sauce, salt and pepper, or other seasonings to taste.

Serve with extra soy sauce, lime wedges, and chili garlic sauce or kimchi.

You can use any mushrooms of your choice – shitake etc.

The weather may be warm but a delicious refreshing soup is always so welcoming. It is soup weather any time of the year, and here is a delicious recipe, which has now grown to be one of my favorites. A rich, flavorful broth, spiked with a little spice from the chili and lime juice, stocked with mushrooms, fragrant rice, and melting strands of cabbage. It’s hot and sour, delicious yet simple, hearty yet light, and the best part, it is a complete meal in itself — everything you want right now. I’m sure you have been stuffing yourselves with rich food over the weekend with Valentine’s Day goodies and this simple soup was much appreciated by my family.

Happy soup-eating!!
