  1.  Add the onion and garlic and, stir frequently. Cook until it’s soft, about 5 minutes.
  2. Turn the heat to high and add the mushrooms.
  3. Stir every couple of minutes and cook until the mushrooms are nicely browned (about 10 minutes). At this point, if you’d like to, you can remove a small handful of mushrooms for garnish.
  4. Add the potato and stir to blend.
  5. Pour in the broth and bring to a boil. Then reduce the heat to low, cover the pot, and simmer until the potatoes are very tender (10 to 15 minutes).
  6. Using a blender, purée the soup until it’s as smooth. (as smooth as possible)
  7. Season with salt and pepper as per taste.
