Eggplant and Potato tarts

  1. Preheat oven to 200 Degree Celsius.
  2. Heat 1 tablespoon of oil in a large pan. Cook eggplant slices over medium heat until golden and soft. Remove to a plate and drain excess oil on a kitchen towel. Add 1 tablespoon oil and cook potatoes until tender and starting to brown. Keep aside on a plate. Add 1 tablespoon oil and cook onion and garlic over very gentle heat for about 6 to 8 minutes until it starts to caramelize. Season it well with salt and pepper then stir through chopped parsley.
  3. Roll out the dough on a flat surface. Use a small bowl or cookie cutter to cut circles from the pie crust. Place on a tray lined with baking paper. Divide onion mixture between each disc, being sure to leave a border. Top with cooked eggplant and potatoes. Brush a little extra oil on the pastry border.
  4. Bake for 8 to 10 minutes until pie crust is golden. (oven times may vary)


  1. You could also bake these in small tart/pie plates or in one big tart/pie plate.
