For the filling:

  • Tur Dal 1 cup
  • Jaggery  1 cup (3/4th cup if the jaggery is dark brown as against yellow in colour)
  • Cardamom 3
  • Grated coconut : 3 tbsp

For the dough :

  • Maida – 1.5 cups
  • Salt pinch
  • Turmeric pinch
  • Oil 3 tbsp


1. Sift the flour with turmeric and salt. Combine water and gently fold and blend it into dough that is slightly softer than chapatti dough. Smear the dough with oil, cover it with a damp cloth and let it rest for 2 hours.

2. Cook the Tur dhal in about 5 cups of water by bringing to a boil and simmering till cooked.

3. In a pan, add the drained dal, jaggery, coconut and crushed cardamom and heat it until the mixture comes together into a nice moist lump. The lump will harden when it is cooled. It is easy to roll the Holige if the filling is slightly soft.

4. After it is cooled, run the dal mixture in the mixie till it is smooth.

5. Make balls out of the Maida dough and the dal mixture.

6. Grease a plastic sheet and pat out the dough balls into small circles.

7. Fill the dal mixture balls into them, pinch them close.

8. Pat the pinched balls into large round roti shapes and make it as thin as possible.

9. Cook the flattened holige onto a tava with ghee.

10. Serve with ghee. Also tastes great with khus-khus payasam!

Holige, obbattu, puran poli – call it what you want, but this traditional sweet is sure to be a hit with your family. Especially on Ugadi!
