Celery Rice With Orange Zest

Ingredients:

1/2 cup Brown rice (if you don’t have brown rice, use whatever is available in your pantry)

1 teaspoon olive oil or ghee

3 cloves of garlic, finely chopped

1 green chili, finely chopped

100 grams Celery stalks with leaves

1 cup vegetable stock or water

Zest of half an orange

Salt, to taste

Procedure:

Wash and finely slice the celery stalks. Finely chop celery leaves. Keep them aside in separate bowls.

Wash and soak rice in water for 30minutes.

In a large pan, heat oil and sauté garlic, green chilli and celery stalks for 5 minutes. Then add celery leaves and sauté on low flame for 5 to 7 minutes. Add orange zest, vegetable stock and enough salt and bring it to a simmer.

Add the soaked rice and cover and cook until done.

Serve hot/ warm with a bowl of fresh salads.
