Ever noticed how, at times, on consuming something in particular, either we begin getting a body rash or feel nauseated. If this has been the case, it’s definitely some sort of allergy against that food item. And we don’t want to see this happening to our kids, do we? Moreover, many a times, we don’t even get to know if kids can be irked because of gluten or anything that’s not easily diagnosed to be causing allergy in the first place. But needn’t worry and wonder if this can be true always. However, trying these safe and easy recipes for your kid’s lunchbox is no harm! After all, they do share the food with others and who knows, who is allergic to what!?

1. Delicious Veggie Nuggets + Carrot Coins + Grapes + Honey Mustard Spinach Roll ups

Method

For Veggie Nuggets

Cook potatoes, carrots, cauliflower, corn. Mash it all up or grind in blender along with salt, pepper, garlic powder and a little paprika. Add freshly chopped parsley or coriander leaves and and combine well. Spread this mixture on to parchment paper placed on a baking tray. Freeze for 1 to 1.5 hours. (you can also simply freeze the dough for the same time.) Once the vegetable mixture is ready, roll into desired shapes, coat in gluten free flour, dip in beaten egg (if allergic skip this step and proceed to the next) and coat with breadcrumbs made from gluten free bread. Place on a baking sheet, light drizzle oil on the nuggets. (you can use cooking spray too) Bake for a few minutes until the nuggets turn golden at 200 degree Celsius.

[you can also freeze these nuggets. After making desired shapes, freeze for at least 2 to 2.5 hours on a baking sheet. Remove and place in a freezable storage container, zip pouch/loc, for up to 3 months)

For Honey Mustard Spinach Roll Ups

Make rotis/parathas with gluten free chapathi flour. Mix together cooked spinach, hung curd, cooked chicken (non vegetarian) or carrot (vegetarian), a little honey and powdered mustard. Season with pepper and salt. Roll up filling inside the roti and cut into small rounds.

2. Sun Butter + Apple Wedges + Cold Pasta Salad with Zucchini, Cherry Tomatoes, Bell Peppers and Herbs

Method

For Sun Butter

Preheat oven to 175 degree Celsius and roast 1 pound raw sunflower seeds on a baking sheet 6 to 8 minutes. (toss seeds half way through roasting process) Transfer the seeds to a food processor or blender and add 3/4 teaspoon salt. Grind to a fine powder. Add 2 teaspoons ghee and 1 tablespoon raw honey and continue to grind till nice and creamy.

For Cold Pasta Salad

Cook any kind of gluten free pasta and cool to room temperature. Lightly sauté finely chopped zucchini, cherry (or regular) tomatoes, bell peppers in a little olive oil. Flavor with herbs (thyme, oregano, rosemary anything you like). Once the vegetable mixture has cooled, add it to the cooled pasta and mix well. Add a little more olive oil and season with pepper and salt. Combine well.

Arrange tiffin box with sun butter, apple wedges and cold pasta salad.

3. Potato and Corn Chaat + Cardamom Amaranth Cookies + Orange Segments + Sweet Potato Crackers

Method

For Potato and Corn Chaat

Mix together diced boiled potatoes, steamed corn kernels in a bowl. Add pepper, salt, lemon juice, chili powder, (optional) chaat masala and coriander leaves.

For Cardamom Amaranth Cookie

Preheat oven to 150 degree Celsius. Combine 1 tablespoon powdered flax in 3 tablespoons water. Powder the seeds of 3 to 4 cardamom pods. Mix together 1 cup roasted amaranth flour, cardamom powder, and 1/2 teaspoon baking powder (optional). Combine 1/3 cup powdered jaggery and 1/4 cup coconut oil (semi solid) and add to flour mix. Combine well to make a dough. Shape into cookies and bake for 8 to 10 minutes or till edges are slightly browned.

For Sweet Potato Crackers

Cook and mash 1 large sweet (roughly 1 cup) potato. Add 1 1/2 cups gluten free chapathi flour, 2 1/2 teaspoon baking powder, 1/2 teaspoon salt, 3 tablespoon water and knead well. Add more water if necessary to bring it all together. Make desired shapes and bake at 175 degree Celsius for 5 minutes. Flip and bake  for another 5 minutes. Leave to Cool.

Arrange lunch box with potato and corn chaat, cardamom amaranth cookies, orange segments and sweet potato crackers.

4. Tuna Salad + Vegan and Gluten Free Methi Crackers + Spinach and Tomato Salad + Corn + Banana Slices

Method

For Tuna Salad

Mix together canned tuna (if using fresh tuna, cook it) along with eggless mayonnaise, pepper, salt and chopped spring onions or chives.

For Vegan and Gluten free Methi Crackers

Mix together 2 cups gluten free chapathi flour, 2 tablespoons kasuri methi (dried fenugreek leaves), 1/2 teaspoon chili powder, 1 teaspoon cumin powder, 1 teaspoon turmeric powder, 1/2 teaspoon kalonji seeds, 1/4 cup ghee, salt to make a firm dough. Roll dough into a large circle and cut into rounds (or desired shape). Place on a greased baking tray and bake in a preheated oven at 180 degree Celsius for about 10 to 12 minutes or till golden brown and crisp.

For Spinach and Tomato Salad

Blanch spinach leaves and roughly chop them up. Mix with finely chopped tomatoes, pepper, salt, lemon juice.

Arrange the lunch box with Tuna Salad, Methi Crackers, Spinach and Tomato Salad, Steamed Corn and Banana Slices.

5. Mashed Potatoes + Broccoli and Tofu Stir Fry with Sesame Seeds + Cucumber and Carrot slices + Strawberry Wedges

Method

For Mashed Potatoes

Boil potatoes and mash till smooth. Mix in cracked pepper, salt, chives or scallion.

For Brocoli and Tofu Stir Fry with Sesame Seeds

Toast sesame seeds and keep aside. Steam broccoli florets with a pinch of salt and keep aside. Heat oil in a wok and add crushed garlic. Add broccoli florets and tofu and stir till tofu turns a lovely brown. Throw in the toasted sesame seeds and mix well.

Arrange the lunch box with Mashed Potatoes, Brocoli and Tofu Stir Fry with sesame Seeds, Cucumber and Carrot Slices and Strawberry Wedges.
